This is a soup that smells like home and autumn. Made in one pot and perfect for meal prep, since you can easily reheat it for the next three days or freeze it for later, where it keeps well even longer.

Preparation process

  1. In a large pot, quickly sear the chicken thighs in a little oil until lightly browned. Remove them and, in the same pot, sauté the chopped garlic, grated ginger, and sliced leek.

  2. Add all the spices: smoked paprika, marjoram, cumin, turmeric, salt, and pepper, and stir until fragrant.

  3. Return the chicken to the pot, then add the chopped Hokkaido pumpkin, potatoes, carrots, and rinsed lentils. Pour in water or broth, cover, and cook for about 40 minutes until everything is nicely softened.

  4. Once the soup is cooked, shred the chicken with a fork if desired and return it to the pot.

  5. Serve with fresh herbs and a spoon of yogurt if you like. Bon appétit!
