An express, balanced lunch that Ana Žontar’s whole family loves. She always serves it with a bowl of salad on the side and has lunch ready in 15–20 minutes.

Preparation process

  1. Rub the chicken cutlets with salt, half of the pepper, and half of the garlic. Let them rest for at least 30 minutes.
  2. Heat a pan and sear the cutlets without any added fat, about 2 minutes per side. Then pour in the broth. Add the remaining garlic, pepper, parsley, and salt if needed (if the broth is not salty or if using water).
  3. Cover and cook for 5 minutes. In 100 ml of water, mix the cornstarch and tomato paste. Stir this mixture into the meat and bring to a boil until the sauce thickens. For a richer version, you can also add a tablespoon of butter.
  4. For serving, remove the cutlets. Stir the cream into the sauce and add cooked cottage cheese gnocchi or pasta. Serve with the chicken cutlets.
