Chicken Lomo Saltado

A simple Peruvian combination of meat, vegetables, fries, and rice, but the flavor is a real explosion! Prepared in a simplified version with chicken, making it great even for meal prep.

Preparation process

  1. Prepare the fries in an air fryer until crispy. Wash and cut the vegetables into large pieces. Cook the rice in salted boiling water.

  2. Cut the chicken into larger cubes and quickly pan-fry it in a spoon of oil. Season with salt, pepper, and garlic powder. Cook for a few minutes and set aside.

  3. In the same pan, quickly sauté the onion, peppers, and tomatoes so the vegetables remain slightly crunchy.

  4. Add the chicken back in, then pour in the soy sauce, vinegar, oyster sauce, and chili. Stir quickly over high heat.

  5. Serve with cooked rice and fries and enjoy every bite. Bon appétit.
