Homemade chicken hot dog
Preparation process
Hot dog buns:

Make a yeast starter using milk and water, then add 10 g of salt and 1 teaspoon of sugar.

Put the flour into a mixer and add the yeast mixture and room-temperature butter. Knead for 8 minutes.

Place the dough in an oven at 30°C and let it rise slowly (1 hour).

Shape the dough into a log and cut it into buns of desired length, then brush them with a mixture of beaten egg and milk.

Let them rise for about 30 minutes. Bake at 180°C for 15–20 minutes.
Sauerkraut:

Fry the pork cracklings in a pan until crispy, then add the sauerkraut and braise it for about 30 minutes.
Assembly:

Cut the hot dog bun in half and spread mustard on the bottom half.

Add the sauerkraut and place a sliced smoked sausage (Poli) on top.
