Homemade chicken hot dog

Preparation process

Hot dog buns:

  1. Make a yeast starter using milk and water, then add 10 g of salt and 1 teaspoon of sugar.

  2. Put the flour into a mixer and add the yeast mixture and room-temperature butter. Knead for 8 minutes.

  3. Place the dough in an oven at 30°C and let it rise slowly (1 hour).

  4. Shape the dough into a log and cut it into buns of desired length, then brush them with a mixture of beaten egg and milk.

  5. Let them rise for about 30 minutes. Bake at 180°C for 15–20 minutes.

Sauerkraut:

  1. Fry the pork cracklings in a pan until crispy, then add the sauerkraut and braise it for about 30 minutes.

Assembly:

  1. Cut the hot dog bun in half and spread mustard on the bottom half.

  2. Add the sauerkraut and place a sliced smoked sausage (Poli) on top.
