Noodles in tomato sauce with chicken
With artichokes, olives, and capers. Fresh, nutritious, quick to prepare, and incredibly delicious.
Preparation process
- Meat: Cut the meat into bite-sized pieces.
- Vegetables: Peel and grate the garlic. Slice the sun-dried tomatoes. Cut the olives into rings.
- Sauce: Heat a tablespoon of oil and sear the meat, seasoning it with salt and pepper. Add garlic, sun-dried tomatoes, and basil, and cook for another minute until the garlic becomes fragrant. Pour in the wine, stir, and wait until it reduces. Then add the chopped tomatoes, artichokes, capers, and olives, and mix well. Cook for about 10 minutes.
- Noodles: While the sauce is simmering, cook the noodles. Reserve some of the cooking water.
- Finishing the sauce: Taste and adjust seasoning with salt and pepper if needed. Stir the noodles into the sauce. If the sauce is too thick, add a little of the reserved pasta water.
- Serving: Plate the noodles with sauce, sprinkle with chopped parsley and Parmesan, and serve immediately.
