Chicken cutlets in pesto sauce with tomatoes and mozzarella

Preparation process

  1. Meat: Season the chicken cutlets with salt and pepper on both sides. Heat oil in a pan and fry the chicken cutlets for about 4 minutes per side.

  2. Pesto sauce: While the chicken is cooking, prepare the pesto sauce. Mix together pesto, honey, balsamic vinegar, cornstarch, grated or minced garlic, and water.

  3. Sauce: Pour the pesto sauce over the meat and simmer briefly until it starts to thicken. Add the cherry tomatoes and cook for another 5 minutes.

  4. Cheese: Remove the pan from the heat, add the mozzarella balls, and cover the pan so the residual heat melts the cheese.

  5. Serving: Serve the chicken in pesto sauce with your choice of side dish—couscous is a great option, as well as rice, pasta, or bread. Garnish with fresh basil and serve immediately.
