Oven-baked autumn gnocchi

This is a recipe you absolutely have to include in your weekly meal plan because of its convenience and amazing taste!

Preparation process

  1.  On a large, lightly oiled baking tray, spread out the diced carrots, beets, and leek. Season with all the vegetable spices and bake for 15 minutes at 200 °C.
  2. Meanwhile, marinate the mini chicken fillets in mustard, salt, pepper, and garlic powder.
  3. After 15 minutes, add the frozen gnocchi and the marinated chicken to the tray and gently mix everything together. Sprinkle with pine nuts and feta cheese.
  4. Bake for another 20 minutes until everything is nicely roasted, soft, and aromatic.
  5. Then serve with the truffle dressing and enjoy.
